Refresh Your Summer Days with These 5 Cocktails

Summer is here and there is no better way to calm down the heat than a fresh, delicious cocktail. Soak up the sun...and cocktails! 
Plan a perfect summer day with your gals and prepare these amazing cocktails I found online! I suggest you drink them by the pool while you all work on your sun kissed skin!
Watermelon+Champagne Cocktail
4 1/2 cups seedless watermelon cubes
1/4 cup vanilla-infused vodka, such as Absolut Vanilla, chilled
1/8 cup triple sec 
1 1/2 ounce fresh lime juice
Champagne, for topping off the drinks 
  1. Process the watermelon cubes in a blender on high until smooth. Using a fine sieve, strain out 2 cups of the watermelon juice to a large container and refrigerate for 30 minutes
  2. Add the vodka, triple sec and lime juice to the chilled watermelon juice. Stir until well combined.
  3. When ready to serve, pour the drink into 4 Champagne flutes, leaving room at the top. Gently top off each flute with some Champagne.
Blue Crush Margarita
2 limes, sliced into wedges
Course salt, for rimming glasses
1/4 c. Blue Curacao
3 oz. tequila
3 oz. triple sec
1/3 c. lime juice
1 can seltzer
2 c. ice
1. Rim two tall glasses with lime and salt.
2. Combine Curacao, tequila, triple sec and lime juice into the glasses and stir to combine.
3. Top with a splash of seltzer and as much ice as desired. Garnish with a lime wedge and serve.
Piña Colada Pineapple Cups
2 pineapples
4 oz. light rum
1 oz. dark rum
4 oz. Coconut Cream
2/3 c. chopped fresh pineapple
splash pineapple juice
splash coconut milk
ice
1. Cut off the pineapple tops.
2. With a pineapple corer, remove the top 3/4 of the inside of the pineapple.
Take out the tall remaining core with a knife.
3. In a blender, mix together the alcohol, coconut cream, pineapple chunks, juice, coconut milk and ice. Blend until slushy. Divide drinks between the two pineapple cups cups.
Mojito Slushies
1/2 c. fresh lime juice (about 4 to 6 limes)
1/4 c. agave
1/3 c. fresh mint leaves
Zest of 2 limes
1/2 c. light rum
ice
Mint sprigs, for garnish
Lime wedges, for garnish
1. Add the lime juice, agave, mint leaves, lime zest, and rum to a blender. Blend until smooth. Fill the blender to top with ice and blend until slushy.
2. Pour into glasses, garnishing each with a sprig of mint and a lime slice.
Cucumber-Honeydew Freeze Recipe
SWEET FENNEL SALT
2 tablespoons ground fennel seeds
2 tablespoons sugar
2 tablespoons kosher salt
COCKTAIL
1 lime wedge
8 ounces gin
2 cups chilled chopped peeled cucumber
2 cups chilled chopped honeydew melon
6 ounces fresh lemon juice
1 cup honey
5 cups ice
1. In a medium bowl, mix the kosher salt, sugar and ground fennel seeds.
2. Moisten half of the outer rim of 6 chilled white wine glasses with the lime wedge and coat lightly with the sweet fennel salt.
3. In a blender, combine all of the remaining ingredients except the garnishes and blend until smooth. Pour the drink into the glasses. Garnish the drinks with the cucumber wheels and honeydew melon balls.
